CULTURE
Nicknamed “the island of chocolate,” São Tomé holds a central place in the history of cacao. Introduced in the 19th century from Brazil, cacao trees found an ideal environment to thrive there, making this volcanic island one of the cradles of cacao cultivation in Africa.
The Vila Gracinda plantation, founded in 1921 in Santo Amaro, is part of this legacy. It benefits from an exceptional ecosystem, where mineral-rich volcanic soils deeply nourish the cacao trees. The hot and humid equatorial climate, combined with the direct influence of the ocean, gives the beans a unique aromatic complexity, marked by notes that are at once powerful, briny, and intensely exotic.
FERMENTATION AND ROASTING
After harvesting, the beans undergo a precise and structured fermentation process, which is essential for unlocking their aromatic potential.
Fermentation lasts 6 days and takes place in 3 successive 48-hour stages in different bins. This process allows the aromas to develop gradually. Each day, the beans are stirred by hand to bring out characteristic fermentation notes that are airy, expressive, and deliberately pronounced.
The result is a pure chocolate, made with just three ingredients and no lecithin, where every aromatic nuance comes into its own.
