Summer heat has now graced the Chartreuse for several weeks...
Just beyond our chocolate workshop lies our garden, where each variety of aromatic plants luxuriates in this scorching, vibrant sunshine. Among the most emblematic, we find verbena, thyme, agastache, lovage and peppermint, which we harvest by hand. I know of nothing more delightful than stepping away from the laboratory, scissors in hand, and approaching these plants while breathing in their volatile aromas. Feeling the breeze gently caress my skin, it is an enchanted moment within the magnificent setting of the Chartreuse.
Back in the laboratory, our team dedicates itself to preparing the seven ganaches that constitute our Herbaceous collection box. This ephemeral collection (available from summer onwards, while stocks last) represents one of the cornerstones of our chocolate house: the work with aromatic and wild plants and their pairing with chocolate lie at the heart of our culinary identity and creative expression.
Flora intrigues, captivates and amazes me!
Whether on hiking trails or in my laboratory, its richness captivates all my senses and challenges me in balancing our recipes. I am committed to working with plants while preserving all their aromatic potential, without losing a single nuance of flavor. To achieve this, we prepare infusions that we taste regularly to find the perfect balance, and it is remarkable to perceive the aromatic power they release. Just a few leaves are sometimes enough to perfume our entire ganache, offering us an astonishing and refreshing result on the palate. Our ganaches are then cut, enrobed and carefully placed in their precious case, ready to be savored.
Mmm, I must discover this new Collection...Once again this year, creating this ephemeral collection has been a true pleasure, and we hope it will offer you a genuine moment of indulgence, discovery and wonder.
