“Millésime” collection: our honor given to French heritage
Let us look back together at what led us to launch three weeks ago our first collection blending wine and chocolate.
It all begins with our passion for regional heritage, which has driven us for almost 10 years to showcase the exceptional products of our mountains. Green Chartreuse, Grenoble walnuts, fir buds and so many other treasures contribute to our creations of exceptional chocolates.

The idea took shape, the project matured, the desire to explore and also to meet craftspeople and individuals as passionate as we are became inevitable. And it was during our journey through the Jura that meeting a wonderful couple of winemakers sparked the creative impulse to offer you these novelties that enhance local wines.
It is in the heart of the vineyards of Annie and Jean-Claude Crédoz, winemakers at Château-Chalon, a jewel of Jurassian gastronomy, that our shared passion for product excellence brought us together around this project. Thus our first edition of the "Millésime" collection highlights the great quality of their wines, yellow wine and straw wine.
But the hardest part remained, for water and chocolate do not mix well. Yet wine contains up to 85% water. It was therefore necessary to overcome the limits of conventional chocolate work by conducting numerous tests to achieve this new collection with Jurassian tonalities.
The chocolate flavours that thus emerged emphasize and enhance the characteristic and spicy notes of yellow wine and straw wine, exclusive vintages of the Jura. We designed two chocolates to resonate with the flavours of each. Yellow wine and its subtle aromas of walnuts, almonds and pear unfold at the heart of a wild 68% cacao from Bolivia accompanied by a yellow wine pear jelly to highlight the harmony of the whole. As for straw wine, its succulent notes of preserved fruits, and the complexity of apricot and fig notes offer a richness perfectly welcomed by the ganache of first-growth Madagascar plantation 64% cacao.
